Quinoa Salad

Protein-rich quinoa salad with crunchy vegetables and light lemon dressing.

Ingredients:

- 1 cup cooked quinoa

- 1 cucumber chopped

- 1 cup cherry tomatoes halved

- 1/4 red onion finely sliced

- 2 tbsp olive oil

- 1 tbsp lemon juice

- Salt and black pepper to taste

Method:

1. Add quinoa and chopped vegetables to a large bowl.

2. Whisk olive oil, lemon juice, salt, and pepper.

3. Pour dressing over salad and toss well.

4. Chill for 15 minutes and serve fresh.
