Mediterranean Chickpea Salad

Mediterranean-style chickpea salad with olive oil and lemon dressing.

Ingredients:

- 2 cups cooked chickpeas

- 1 cucumber diced

- 1 cup cherry tomatoes

- 1/4 cup olives sliced

- 2 tbsp extra virgin olive oil

- 1 tbsp lemon juice

- Parsley, garlic, salt, pepper

Method:

1. Combine chickpeas and chopped vegetables in a bowl.

2. Mix olive oil, lemon, garlic, and seasoning.

3. Toss salad with dressing and parsley.

4. Rest 10 minutes before serving.
